In the Kitchen: Low Carb Spag Bol

I got a spiralizer for Xmas and I thought it would be very useful in showing you how to make spaghetti bolognese in a much leaner, healthier way – perfect for getting back on track this New Year…

So, I have said low carb spag bol in the title and you are probably thinking how have I made it low carb. Well, it’s pretty simple – I have replaced the usual (stodgy) pasta for something a bit lighter. This is where the spiralizer comes in, and what a joy it was to use. I replaced the pasta with a couple of courgettes (in fact just one normal-sized courgette will do the job nicely), and this is what it looks like…

That’s right green spaghetti 🙂

Now, the spaghetti is sorted – let’s move on to the bolognese. As you probably know, traditionally the bolognese is beef mince with a jar of tomato sauce. In my world its not quite like that. I’m swapping the beef for turkey mince. By doing that I am decreasing the amount of fat I am eating, but I am also increasing the amount of protein I am consuming. So really its a win-win for everybody trying it.

The sauce is something that is easy to put together as well.

Step 1

So start by chopping up half an onion (white or red, it doesn’t matter). Make sure you hold the tears back though, right?!? and adding it to a pre-heated pan or a pre-heated saucepan. Your pan of choice should have some olive oil or coconut oil already in it.

Step 2

Its time to add in the turkey mince to the pan and cook it off with the onions.

Step 3

Let’s add in the tomato sauce. You can use either a tin of chopped tomatoes or you could even use some passata (an Italian type of tomato sauce), and this is what I used. I added around 250g to my cooked mince and onions.

Step 4

Let’s add a little bit of flavour by adding a very small amount of salt to the sauce and then stir it in. You then cover up the pan and let it simmer for around 15-20 mins. The sauce is ready once you have achieved your desired consistency/thickness. There you go, there is your bolognese.

Step 5

It’s time to serve up. Make sure you have created a bed of courgette spaghetti on a plate and then simply pour the bolognese on top.

Job done people!

I’ll list the ingredients you need here…

  • 1x courgette per person eating
  • Half an onion – chopped
  • 200-250g of turkey mince per person eating
  • 125g of chopped tomatoes/passata per person eating

And you will need a spiralizer of course.

There you have it, something low carb, something that is low fat – you’ve got something that is going to taste great. Give it a go and let me know what you think.
